Colin's Creek Barbecue features the best in Ranch Style Cuisine and Texas Pit Smoked Barbecue. Our woods of choice are aged mesquite and post oak which we get from the Texas Hill Country. When were not catering a party you might find us competing in Kansas, Oklahoma, or on any one of the different Texas barbecue circuits that the state has to offer. From time to time we'll also cook with the pro's and in 2009 were ranked nationally among the top 30% in the country in the categories of brisket and chicken. Our barbecue is very unique in that we bring the styles and flavors of Ranch Style-Pit Smoked Barbecue together with what we do on the competition circuit. We have filled our shelves with books upon books about barbecue and ranch style cooking. We feel that unless you make the effort to go outside and practice what you learn and apply it to your own style of cooking your just cooking recipes. We like to take notes and record what we do and why, and are not afraid to make changes or get in the kitchen and add things or take them away. If you never practice and just go by what someone says you never really learn anything or develop your own style of flavor.
What sets us apart from some of the other barbecue guy's is that we travel the country every year and learn from some of the best in the business. We are now honored to call some of them our dearest friends. We have traveled to Memphis, Kansas City, North Carolina, and California and have learned the many different styles of barbecue and the different regional flavors that they are famous for. From seminars to private classes we have learned what it takes to make great barbecue and how to do it right. With our knowledge of rubs, sauces, spices, seasonings, woods, & regional barbecue differences we offer a complete package that most folks just cant beat.
